Leftover Fried Rice

I call this recipe "Leftover" Fried Rice, because it's the perfect recipe for when you have too much leftover rice in your fridge. It also is great for repurposing any leftover tofu scramble you might have on hand. This isn't a strict recipe at all, you can throw in whatever ingredients you want, in any amounts, and it will still turn out delicious!

RECIPE
(You don't have to follow the amounts listed here, but these
are typically the ratios I use.)
2 c. leftover rice (make sure it's not warm)
1-2 c. frozen peas and carrots, or any other veggies you want to use up in your fridge
1/2 block tofu, or 1 c. leftover tofu scramble
Salt, pepper, garlic powder, turmeric (optional)
Sauce:
1/4 c. soy sauce
1-2 T maple syrup
1-2 T sriracha
DIRECTIONS:
Fry veggies in a little oil (sesame oil gives a great flavor) until soft and heated through.
Add a little more oil, and crumble the tofu into the pan and add some salt, pepper, garlic powder, and a little turmeric for a yellow "egg" color (optional). Cook until the tofu firms up.
(If using leftover scramble, just add in after veggies are cooked and heat through for a couple minutes.)
Mix sauce ingredients.
Add rice and sauce to the pan and toss over the heat for a few more minutes, until beginning to crisp up.
Top with sriracha and green onion, if desired. Enjoy!
