Tofu Scramble

This scramble tastes like it takes way more effort to prepare than it actually does. It is so good and so easy! This scramble uses very minimal ingredients, all of which are typical pantry staples. Veggie-packed yet super filling and flavorful, you can serve it up for brunch, lunch, or dinner. Even non-vegans won't miss the eggs in this scramble!


Serve this up with a side of crispy potatoes and you have a filling meal to last all day long. I use the potato recipe from my Crispy Potato Soft Taco page and they work perfectly as a side. I also like to make sure to have leftovers of scramble and potatoes to make breakfast burritos the next day! Yum!




RECIPE

Serves 2:


  • 1 block firm tofu

  • Spices -Can use what you have on hand, but these are my favorites: Chili powder, garlic powder, salt, pepper, turmeric (optional, for color)

  • 1/4 c. nutritional yeast

  • Fresh or frozen veggies (I like to use a frozen bell pepper and onion mix, zucchini, and fresh kale)

  • Optional toppings: sliced avocado, sliced green onion, cherry tomatoes, hot sauce


Squeeze out the excess water from the tofu with paper towels or a tofu press.


Place tofu into a bowl, along with the spices (to taste) and nutritional yeast. Use a decent amount of spices, since tofu is very bland on its own. Using a small sprinkle of turmeric will allow for a yellow "scrambled egg" color to come out as the tofu cooks in the pan.


Crumble tofu with your hands or a fork and mix together with spices and nutritional yeast. Set aside.




In a large pan, heat a drizzle of oil over medium-high heat.


Add your veggies and cook until heated through and soft, adding a small sprinkle of the same spices you used in the tofu.

Pour into a bowl and set aside.


In the same pan, heat a few tablespoons of oil over medium-high heat.


Add the tofu and let it cook for a couple of minutes, before tossing. Use a spatula and flip/toss the tofu only occasionally, allowing it to turn golden and not get too crumbly.


Once the tofu is golden and firmed up (like in the photo below), add in your veggies.

Be sure to drain any excess water out of the veggies before adding to the tofu.



Gently toss the tofu together with the veggies, cooking just for a minute or two. Taste and add more spices/salt if needed.


Serve scramble with desired toppings, either by itself or with a side of potatoes or avocado toast. Enjoy!
