Spicy Peanut Noodles

This is one of my most favorite meals of all time. It is so quick to put together, has all the flavors and textures I could ever want, and it tastes delicious cold right out of the fridge! Make a big batch at the beginning of the week and eat it for lunch all week long!

RECIPE
Serves 4-6:
1 package soba noodles or whole wheat spaghetti (or any noodles you have on hand)
Any fresh or frozen veggies you have available to use. My favorites to use are kale, broccoli, bell peppers, and zucchini.
Cooked tofu or edamame (optional, for extra bulk and protein)
Cook noodles according to package instructions.
Rinse noodles under cool water after cooking. This is a very crucial step, as it prevents the sauce from getting thick and pasty and to allows it to coat the noodles evenly.
While noodles are cooking, start cooking veggies in a pan until crisp-tender, then sprinkle with some soy sauce and garlic powder.
Add your protein into the pan as well, if using, and cook a couple more minutes.
Add mixture to a large bowl, along with the rinsed noodles.
Spicy Peanut Sauce:
(Feel free to double recipe to have some extra sauce on hand.)
½ cup creamy peanut butter
⅓ cup soy sauce
3 T maple syrup
3 T sriracha, can adjust based on spice level
1½ T lime juice
¼ tsp garlic powder
Water to thin, if necessary
Whisk sauce ingredients together until completely smooth. Pour over veggies and noodles and toss to coat.
Can serve as-is, or top with chopped peanuts, chopped green onion, cilantro, sesame seeds, or extra sriracha, if desired. Enjoy!
