Marinated Cucumber Slices

This is a super simple and refreshing snack you can make in one whole minute. Tangy, sweet, salty, spicy, crunchy, hydrating, and delicious, it fulfills all the requirements for a tasty and hydrating snack!

  • Peel and slice cucumber to desired thickness

  • Place slices in a bowl and cover with a few tablespoons of seasoned rice wine vinegar (if you don’t have this particular kind of vinegar, you can use any kind you do have. I just like the sweetness of the seasoned rice vinegar, but you can use red wine or white vinegar and add your own sweetener)

  • Sprinkle a little salt and pepper on top of the slices

  • Mix and enjoy!

You can also add other fun veggies if you wish! In this photo, I added some pickled red onions.
