Smoky Sweet Potato Tacos

These have all the textures and flavors you could want in a taco. They’re salty, spicy, sweet, smoky, creamy, crunchy, chewy, and zesty. You can make all the ingredients ahead of time and store separately in the fridge. Just heat up and assemble for a super quick lunch or dinner!

RECIPE
Sweet Potato:
1 jumbo or two medium sweet potatoes
Wash, pierce with a fork, and bake on a sheet of foil at 425 degrees for 45 minutes to an hour or until the inside is super soft and starts to shrink back from the outer skin.
You can also chop and boil the sweet potato until tender if you need a quicker version.
Sweet and Spicy Beans:
1 can black or pinto beans, rinsed and drained
3 T BBQ sauce
1-3 tsp. diced chipotles or hot sauce you have on hand (use more or less with spice preference)
1/2 tsp. chili powder
1/2 tsp. garlic powder
Salt and pepper to taste, if needed
A splash of water to help with simmering
Simmer for five minutes

Slaw:
1 package broccoli slaw mix
1/2 red onion, finely chopped
Chopped cilantro (optional)
Roasted pepitas (optional)
Dressing ingredients:
3 T vegan mayo (or 2 T tahini mixed with water to thin out)
2 T BBQ sauce
1 T sriracha (more or less depending on spice preference)
1 T lime juice
1/2-1 tsp. each salt and pepper
Pour a little dressing over the slaw and toss to coat. You don't want the slaw to be super thick with dressing, just lightly coated. If you end up having leftover dressing, you can save it in a container for another salad.
Other ingredients/topping options:
Tortillas (flour or corn, whichever you prefer), warmed in a pan
Sliced avocado
Sliced cherry tomatoes
Chopped cilantro
Hot sauce or taco sauce of choice
ASSEMBLY
Take a spoonful of sweet potato and spread it over the warmed tortilla. Sprinkle a little salt on the mashed sweet potato. Top with a spoonful of beans, slaw, avocado, and any other toppings you are using. Repeat until you have a beautiful, abundant platter of colorful, mouth-watering tacos!
