Potato Nachos

Potato nachos are definitely a top favorite meal in our house. They are totally customizable and very versatile, so each person can have fun making their own nacho creation however they want!
These nachos are super nutritious, filled with long-lasting carbohydrate energy from crispy potatoes. They will become a dinner staple that everyone can get excited about!

RECIPE
Makes 2 large servings:
Potatoes:
4 large potatoes, peeled and sliced into 1/4 inch thick discs
Spices of choice (Salt, pepper, garlic powder, onion powder, chili powder, paprika)
Preheat oven to 425 degrees.
Rinse potato discs under cold water and dry with a towel.
Or, you could prep the potatoes ahead of time by slicing them in the morning, placing them in a bowl filled with cold water, then cover and keep in the fridge until you're ready to cook dinner.
Place dried potatoes on a large baking sheet lined with parchment paper. Sprinkle on some salt, pepper, and other spices that you enjoy. My favorites to use are garlic powder, onion powder, chili powder, and paprika.
Drizzle potatoes with some oil, or leave off if you prefer.
Bake for around 30 minutes, or until potatoes are getting browned, puffed up, and crispy.
Now, add whatever toppings you like! You can use any toppings that you would put on regular nachos or a baked potato.

Buffalo Chik'n Potato Nachos
Layer potato discs on a large plate with the following toppings:
Spicy BBQ beans (recipe below) or use canned baked beans (vegetarian-style)
Buffalo Chik'n patties (like Morningstar Farms brand), heated up and cut into bite-sized pieces
Vegan Cheese Sauce (recipe here) or storebought vegan cheddar shreds
Chopped tomatoes
Diced red onion
Avocado chunks, or guacamole
Sliced green onion
Spicy BBQ Beans:
1 can pinto or black beans, drained and rinsed
1-2 T barbecue sauce
A few shakes of buffalo sauce or other hot sauce
A dash of salt, pepper, and garlic powder
A little bit of water to keep beans saucy and not dry
Simmer beans on medium-low until heated through and thick.
Pile those nachos high, and enjoy your feast!
