Minute Meal: Quick Chili Mac

"Minute Meals" is a series of meal ideas I use for those times when we just need food on the table right now. These recipes require minimal prep, come together in minutes, and are family-friendly. I try to keep the staple ingredients for these recipes stocked in my pantry, so I always have a Minute Meal as a backup for when I don't have time to cook, and going out to eat is not an option.

QUICK CHILI MAC
Directions:
Cook and prepare 1 box of Annie's Vegan Mac according to package instructions.
After mixing the macaroni ingredients together, keep on low heat and add 1 can vegan chili (like Amy's, Stagg, or Nalley vegetarian version). Stir until heated through.
Serve as-is or add toppings like vegan cheddar shreds (like Follow Your Heart or Daiya brand), sliced green onion, crushed tortilla chips, or hot sauce.
That's it! A quick and filling dinner ready in less than 10 minutes! You can serve with a side salad for some veggies, or even with some chips and store-bought salsa or guac. Enjoy!
