Italian Lentil Soup

This is my grandmother's recipe, except with exact measurements added since Italians don't like to measure anything!


This is a simple recipe that tastes very complex and hearty, with a variety of textures and flavors, zesty Italian herbs and, as always, lots of garlic! Serve with lots of fresh bread and olive oil and you have a delicious Italian dinner ready in less than 30 minutes!


RECIPE


  • 1 large onion, diced

  • 4 cloves garlic, minced


Saute in a large pot with olive oil


Add:

  • 1 stalk chopped celery and 2 chopped carrots

  • Italian herbs (I like parsley, thyme, basil, and rosemary)

  • Salt and pepper to taste


Cook for a few minutes until veggies start to soften


Add:

  • 1 small can tomato sauce

  • ½ bag lentils, rinsed

  • Vegetable broth, enough to cover lentils by a couple inches


Simmer until lentils are cooked, around 20-30 minutes. You will probably have to add more broth or water as the lentils absorb liquid.


Add kale, spinach, or any greens you like towards the end of cooking (optional)

Season with additional salt and pepper to taste.
