Creamy Sesame Noodle Salad

Any other cold noodle lovers out there? Even if not, sometimes you just want to eat noodles in the middle of summer without having to sweat over the stove.

This noodle salad will leave you feeling full, fresh and satisfied. It’s got hearty noodles, cold, crunchy veggies, and a rich, creamy dressing bursting with fresh, zesty Asian flavors. With minimal cooking and assembly required, it's the perfect dish for a hot, lazy summer day!





INGREDIENTS


Salad:


1/2 lb. soba noodles or whole wheat spaghetti

1 c. broccoli slaw

1/2 c. shredded carrots

1/2 c. shredded cabbage

1/4 c. sunflower seeds, unsalted

1 bunch green onion, sliced

Sesame seeds for garnishing (optional)


Dressing:


1/4 c. tahini

2-3 T lime juice

1 T rice vinegar (or apple cider/white vinegar)

1 tsp. sesame oil

1 T maple syrup (to taste)

1 clove minced garlic

1/2 tsp. grated fresh ginger

Salt to taste

A couple tablespoons water, as needed, to thin out





ASSEMBLY


Cook noodles according to package instructions. Drain and rinse well with cold water.

Place all salad ingredients in a large bowl.


Mix dressing until smooth, tasting along the way to adjust flavors if needed. Add in a little water, as needed, to thin the dressing to desired consistency.


Pour dressing over the salad a little at a time as you toss all the ingredients together.

You can throw more sliced green onion, sunflower seeds, and sesame seeds on top of each serving.

Serve with an extra wedge of lime and maybe even a tall glass of ice-cold lemonade! Can you tell it’s hot here right now in California? Haha.
