Chickpea Salad Sandwiches

There are so many ways to use this chickpea mixture. Most of the time, I just eat it by itself with a fork! But you can also enjoy it scooped up with crackers, in a pita pocket, in lettuce cups, or on top of avocado toast. It also keeps really well in the fridge, so you can have it pre-made for a super quick lunch!

RECIPE
Chickpea Salad:
1 can chickpeas, rinsed and drained
2 stalks celery, chopped
¼ c chopped dill pickles
2 T vegan mayo or tahini
1 T roasted sunflower seeds (optional, for nutty flavor)
1 tsp mustard (or dijon, if you like)
Pinch of garlic powder
A good amount of black pepper, and salt, to taste
Other ingredients:
Bread, lettuce, tomato, red onion, avocado, pickled veggies, and any other sandwich toppings you like
Mash chickpeas in a bowl with a fork until mostly smooth. Alternatively, you can pulse in a food processor to get it extra smooth if you prefer. Add in the remaining ingredients and mix until combined.
You can toast your bread, if desired, and add more mayo and mustard or avocado to the bread. Top with the chickpea mixture and whichever sandwich toppings you like. Enjoy!
